Here I am, back after a couple of months off. Where have I been, you ask? Well, you'll all find out soon enough ;)
We all know I'm a huge believer in moderation when it comes to food, and I'm feeling the need to shift more towards the healthy side after the month I have just had. While on the subject, I wanted to share with you a recipe from my gorgeous friend Alice, who makes the best treats, full of raw, healthy goodness, that actually taste really scrumptious!
Alice's Caramel Slice
Base:
1 Cup Almonds
1 Cup Almond Meal
1 Cup Shredded Coconut
2 Tbsp Coconut Oil
10 Dates, Pitted
2 Tsp Vanilla Essence
1/3 Cup Water
Blend all together, adding water last until at desired consistency. Press into a tin and put in the freezer.
Caramel:
18 Dates, Pitted
4 Tbsp Coconut Oil
3 Tbsp Maple Syrup
2 Tsp Vanilla Extract
1/4 Cup Water
Blend all together, adding water last, and gradually until it forms a thick paste. Layer on top of the base and put back into the freezer.
Chocolate:
4 Tbsp Coconut Oil
1 Tsp Honey
2 Tbsp Maple Syrup
2 Tsp Vanilla Extract
3 Tbsp Cacao Powder
Heat in pan over low-medium heat, constantly stirring. Pour over the caramel and refrigerate for 1 hour before cutting.
If moderation is really what you're after, melting dark chocolate for the top layer is also an option.
